- 8 cups “OO” or All-Purpose Flour
- 6 whole eggs
- 4 egg yolks
- 2 TBSP olive oil
Place all ingredients in the Kenwood mixer and use the dough hook attachment slowly to start. After it begins to incorporate, you can speed up slightly. Then return to a manageable pace. Once dough has formed and all the ingredients incorporated, take the dough out of the bowl, there should be nothing stuck to the side of the bowl, and pasta dough should be firm yet malleable, not sticky or dry. Cover with plastic wrap or damp cloth and let rest for at least 15 minutes. After rested, you can cut into equal parts or small pieces and begin to run it through the roller for desired thickness.
