Gazpacho Andaluz

Serves 
4 people

  • 1 large can tomato juice
  • ½ English cucumber peeled and cut into pieces
  • 1 red pepper deseeded and chopped
  • 1 green pepper deseeded and chopped
  • ½ medium onion chopped
  • 1 clove garlic peeled and chopped
  • ½ cup olive oil
  • Salt and pepper

 Place all the ingredients into a blender and blend till smooth.

Check for salt and pepper.

Pour into small bowls and garnish with some diced peppers.
